Tahini Dressings are a great way to perk up your summer veggies and salads!

You will need: Tahini - 3/4 cups 1 lemon salt to taste garlic, green onion, or garden garlic scapes small amount of water to reach desired consistency Tahini is a paste made from sesame seeds. The hulled variety has more nutrients when you buy it at the store premade. You can also get brave and make your own tahini! It is simply grinding seseme seeds which you can buy at a natural health food store very inexpensively. Here is a great how to article. Making your Tahini Nummy Dressing or Sauce Combine 3/4 cups of tahini with 1/2 - 1 whole lemon depending on how lemony you like it, add a small amt of salt if desired. Use a food processor or a blender, or the force of you muscles and a potato masher and fork. Add in minced garlic, or garden fresh green onions, or garlic scapes. This is dependent on taste and how much zing you want. Add some pure water at small amounts beginning with a tablespoon. You can create the desired thickness depending if it will be a dressing for salad or other greens like grilled asparagus. Mmmmmm, thanks for this simple recipe and for the reminder to make tahini dressing. I already had all these ingredients in my fridge so it was easy to whip up and add some new interest to my salad :-)
